The US version of the Galaxy S21 FE was the first to receive One UI 6.0 earlier this week. Thankfully, Europeans won't have to wait long before they can enjoy the Android 14-based update. One UI 6.0 is now rolling out for the Galaxy S21 FE in Germany.
The update carries firmware version G990B2XXU5FWK3. Its size is approximately 2.4GB, and the package includes the November 2023 security patch (via @tarunvats33).

It is likely that the One UI 6.0 update is available for the Galaxy S21 FE (SM-G990B) in more European countries besides Germany. You can check for updates on your phone by opening the Settings app, accessing “Software update,” and tapping “Download and install.”
